Zucchini
Fritters
Ingredients
2 medium-size
zucchini
1 egg, lightly beaten
1 Tbsp soy flour
1 Tbsp
yellow cornmeal
3 scallions, white and green
1 tsp chopped fresh ginger (parts, finely chopped)
2 cloves garlic, peeled and (very thinly sliced)
coarsely ground salt and pepper
vegetable oil |

Directions:
- In a deep pot, heat
one inch of oil over a medium high flame.
Julienne the zucchini in a food processor and set aside.
- In a bowl, blend egg with
flour and cornmeal until smooth.
- Fold in zucchini, scallion,
ginger and garlic. Season with
salt and pepper.
- Drop mixture by the forkful
into oil. Let cook for about four
minutes on each side, or until crisp.
- With a slotted spoon, transfer
cooked fritters to a stack of
paper towels to drain. Serve immediately.
Makes about 16 Fritters.
Serves 4. (carb for entire recipe is 27.6g, fiber is 8.02g)
per serving: 6.9g carb of which 2g is fiber
