Zesty Ginger-Tomato Chicken

Ingredients

  • 12 chicken drumsticks and/or thighs, skinned (2 1/2 to 3 pounds)
  • 2 14 1/2-ounce cans tomatoes
  • 2 tablespoons quick-cooking tapioca
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon snipped fresh cilantro or parsley
  • 4 cloves garlic, minced
  • 2 teaspoons brown sugar (optional)
  • 1/2 teaspoon crushed red pepper
  • 1/2 teaspoon salt
  • Hot cooked brown rice (optional)

Prep: 20 Minutes
Cook: Low 6 to 7 Hours, High 3 to 3 1/2 hours
Makes: 6 Servings

Directions:

  1. Place chicken pieces in a 3 1/2 or 4 quart slow cooker.
  2. Drain 1 can of tomatoes; chop tomatoes from both cans. For sauce, in a medium bowl combine chopped tomatoes and the juice from 1 can, tapioca, ginger, cilantro, garlic, brown sugar (if using), crushed red pepper, and salt. Pour sauce over chicken.
  3. Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3 1/2 hours. Skim fat from sauce. Serve chicken with sauce in shallow bowls. If desired, serve with hot rice.
