Ingredients

2 tbsp finely chopped red onion
1 ½ cups deseeded and finely cubed watermelon
2 tbsp green peppercorns, rinsed
salt and pepper

Directions:

  1. Cover the onion with cold water, then leave for 10 minutes to reduce some of acidity. Drain the onion and pat dry on paper towels.
  2. Combine the watermelon with the onion, 1 tbsp of the lime juice, the peppercorns, salt and cayenne pepper. Cover and chill for about 1 hour.
  3. Just before serving, stir in the remaining tbsp of lime juice.
