Ingredients
2 tbsp finely chopped red onion
1 ½ cups deseeded and finely cubed watermelon
2 tbsp green peppercorns, rinsed
salt and pepper
Directions:
- Cover the onion with cold
water, then leave for 10 minutes to reduce some of acidity.
Drain the onion and pat dry on paper towels.
- Combine the watermelon with
the onion, 1 tbsp of the lime juice, the peppercorns, salt
and cayenne pepper. Cover and chill for about 1 hour.
- Just before serving, stir
in the remaining tbsp of lime juice.
