Ingredients
1 pound beef tenderloin
2 cloves garlic, finely chopped
1 medium fennel bulb, thinly sliced
1 can diced tomatoes with Italian herbs
1 tbsp grated lemon zest
½ teaspoon salt
½ teaspoon freshly ground pepper
Directions:
- Preheat the oven to 400F.
Add the beef and cook 3 minutes in a skillet, transfer beef
to the oven. Roast until beef turns to medium rare about
12-15 minutes.
- Sliced the beef and set
aside.
- For sauce, Add the garlic
and fennel in the skillet, cook about 3 minutes or until
soften, add the tomatoes and simmer until slightly thickened,
10 minutes.
- Stir in the lemon zest,
salt, and pepper. Serve the beef with the sauce.
