Ingredients
3 large plum tomatoes, with the tops removed
1 garlic clove, finely chopped
1tbsp lime juice
1 tbsp extra virgin olive oil
½ cup finely chopped red peppers
1 tbsp finely chopped coriander leaves
1 tbsp finely chopped mint
Generous pinch of lime rind
Generous pinch of orange rind
salt and pepper
Directions:
- Put the tomatoes in a heavy-based
pan and cook over a medium to high heat until they are blackened
all over.
- While the tomatoes are still
warm, put them in a food processor or blender with the garlic
and chop roughly. Transfer to a bowl and allow to cool to
room temperature.
- Add the lime juice, oil,
red peppers, coriander, mint and lime and orange rind and
season to taste with salt and pepper. Mix well and let stand
for at least 30 minutes before serving.
