Spicy Pork and Vegetable Soup
Ingredients
- 1 pound boneless pork, cut into 1/2 inch cubes, or beef stew meat
- 1 tablespoon cooking oil
- 1/2 cup chopped onion (1 medium)
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 3 cups water
- 2 medium parsnips or 3 medium carrots, cut into 1/4 inch pieces (1 1/2 cups)
- 1/2 pound winter squash, peeled and cut into 1/2-inch pieces (1 1/2 cups)
- 1 medium sweet potato, peeled and cut into 1/2 inch pieces (1 1/3 cups)
- 1 8 3/4-ounce can whole kernel corn, undrained
- 4 teaspoons instant beef bouillon granules
- 1/2 teaspoon salt
- 1/4 teaspoon cayenned pepper
- 2 cups torn fresh spinach

Cook: Low 10 to 11 Hours, High 5 to 5 1/2 Hours

Directions:
- In a large skillet brown half of the meat in hot oil. Drain meat; place in a 3 1/2 or 4-quart slow cooker. Brown remaining meat with onion, garlic, and paprika; drain and place in slow cooker.
- Add water, parships, squash, sweet potato, undrained corn, bouillon granules, salt, and cayenned pepper to slow cooker. Stir mixture to combine.
- Cover and cook on low-heat setting for 10 to 11 hours or on high-heat setting for 5 to 5 1/2 hors. Add spinach; stir until slightly wilted. Serve immediately.
