Ingredients

1 tablespoon extra virgin olive oil
1 spring onion, finely chopped
200g (7OZ) tofu
pinch of turmeric
½ teaspoon curry powder
¼ teaspoon ground cumin
1 tablespoon grated Cheddar or Parmesan cheese
salt and pepper

Directions:

  1. Heat the oil in a frying pan and sauté the spring onion until soft.
  2. Mash the tofu and put it into the pan with the turmeric, curry powder and cumin. Season to taste with salt and pepper and cook on a high heat for about 2-3 minutes, until the tofu is firm.
  3. Sprinkle the cheese on top and serve immediately.
