Ingredients
1 tablespoon extra virgin olive oil
1 spring onion, finely chopped
200g (7OZ) tofu
pinch of turmeric
½ teaspoon curry powder
¼ teaspoon ground cumin
1 tablespoon grated Cheddar or Parmesan cheese
salt and pepper
Directions:
- Heat the oil in a frying
pan and sauté the spring onion until soft.
- Mash the tofu and put it
into the pan with the turmeric, curry powder and cumin.
Season to taste with salt and pepper and cook on a high
heat for about 2-3 minutes, until the tofu is firm.
- Sprinkle the cheese on top
and serve immediately.
