Mediterranean Chicken
Ingredients
- 2 cups sliced fresh mushrooms
- 1 14 1/2-ounce can whole tomatoes, drained and cut up
- 1 6-ounce jar marinated artichoke hearts, undrained
- 1 2 1/2-ounce can sliced, pitted ripe olive, drained
- 3 tablespoons quick-cooking tapioca
- 2 to 2 1/2 pounds chicken thighs and/or drumsticks, skinned
- 1 tablespoon dried italian seasoning, crushed
- 1/2 teaspoon salt
- 3/4 cup chicken broth
- 1/4 cup dry white wine or chicken broth
- Hot cooked whole wheat pasta (optional)

Prep: 30 Minutes
Cook: Low 7 to 8 Hours, High 3 1/2 to 4 Hours
Makes: 4 to 6 Servings
Slow Cooker: 3 1/2- or 4-Quart

Directions:
- In a 3 1/2- or 4-quart slow cooker combine the mushrooms, tomatoes, undrained artichoke hearts (cut up large pieces), and olives. Sprinkle with tapioca. Place the chicken pieces on top of vegetables. Sprinkle with Italian seasoning and salt. Add broth and wine.
- Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3 1/2 to 4 hours. If desired, serve with hot pasta.
