Ham and Bean Soup

Ingredients

  • 2 cups dry navy beans
  • 4 cups cold water
  • 2 pounds cooked ham, cut into 1/2-inch cubes
  • 5 cups water
  • 2 cups sliced celery (4 stalks)
  • 2 cups sliced carrots (4)
  • 1/2 cup chopped onion (1 medium)
  • 1/2 teaspoon dried thyme, crushed
  • 1/2 teaspoon liquid smoke (optional)
  • 1/4 cup snipped fresh parsley

Prep: 15 Minutes
Cook: Low 8 to 10 Hours, High 4 to 5 Hours
Makes: 8 Servings

Directions:

  1. Rinse beans; place in a large saucepan. Add the 4 cups cold water. Bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes. Remove from heat. Cover; let stand for 1 hour. Drain and rinse beans.
  2. In a 4- to 6-quary slow cooker combine beans, ham, the 5 cups water, celery, carrots, onion, thyme, and, if desired, liquid smoke.
  3. Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. Stir in parsley.
