Cucumber
and Mint Salsa

Ingredients
1 cucumber
2 tbsp dark walnut oil
2 tbsp fresh lemon juice
1 tbsp finely chopped mint
1 tbsp salt
Directions:
- Peel the cucumber and cut
it in half lengthwise. Scoop out and discard the seeds.
- Finely chop the flesh and
put it in a colander. Sprinkle the cucumber with salt, then
place the colander over a plate for 30 minutes to catch
the water.
- Rinse the cucumber and squeeze
out any excess moisture. Put the cucumber in a mixing bowl
and add the oil, lemon juice and mint. Season to taste with
salt and pepper. Mix well and pour into a small serving
bowl.
