Ingredients
2 teaspoons coconut oil
1/3 cup finely chopped onion
1 garlic clove, crushed
½ teaspoon turmeric
½ small red chili, finely chopped
4 curry leaves or 1 teaspoon medium curry powder
½ cup coconut milk
5oz chicken, sliced
Directions:
- Heat the coconut oil in a
pan, add the onion and cook until soft. Add the garlic,
turmeric, chili and curry leaves or curry powder and stir
over a medium heat for 1 minute. Pour in the coconut milk,
season with salt and simmer for 10 minutes
- Add the chicken and cook
for 8 minute
