Chili with Refried Beans

Ingredients

  • 2 pounds lean ground beef
  • 1 cup chopped onion (1 large)
  • 2 15 3/4-ounce cans chili beans with chili gravy
  • 1 16-ounce jar thick and chunky salsa
  • 1 16-ounce can refried beans
  • 1 12-ounce can beer or one 14-ounce can beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 2 tablespoons lime juice
  • Dairy Sour Cream (Optional)

Prep: 20 Minutes Cook: Low 6 to 8 Hours, High 3 to 4 Hours

Directions:

  1. In a large skillet cook beef and onion until meat is brown and onion is tender, stirring occasionally and leaving a few large pieces of beef. Drain off fat.
  2. In a 5- to 6-quart slow cooker place the beef mixture, chili beans with gravy, salsa, refried beans, beer, chili powder, and cumin.
  3. Cover and cook on low-heat setting for 6 to 8 hours or on high heat setting for 3 to 4 hours. Just before serving, stir lime juie into chili. Ladle chili into bowls. If desired, garnish with sour cream.
