Ingredients

1/3 cup mixed leaves
½ avocado, cubed
½ cooked peeled shrimp
1 celery stick, finely chopped
Lime and passion-fruit dressing
1 tablespoon olive oil
1 teaspoon walnut oil
juice of ½ lime
juice and seeds of 1 passion fruit
½ small red chili, deseeded and finely chopped (optional)
salt and peppe

Directions:

  1. First make the dressing. Blend the olive oil, walnut oil, lime juice, passion-fruit juice and seeds and chili with salt and pepper until smooth, then taste and adjust the seasoning as necessary.
  2. Arrange the mixed leaves on a plate. Gently combine the avocado, shrimp and celery with the dressing, pile on to the leaves and serve.
